Original Venison Jerky Recipe

Ingredients:

  • 2 lb. venison (or any meat type)
  • 1/2 tsp. pepper
  • 1 tsp. hot pepper sauce
  • 1 1/2 tsp. barbeque seasoning
  • 2 tsp. MSG
  • 2 tsp. hickory liquid smoke
  • 2 tsp. water
  • 2 tsp. curing salt
  • 2 tsp. garlic powder
  • 2 1/2 tsp. salt

Directions:

  1. Slice meat and mix ingredients.
  2. Coat meat, cover and let sit in the fridge over night.
  3. Remove and blot off excess marinade.
  4. Line dehydrator racks with meat, without touching, and dry jerky to your preference or, if you need help, according to your dehydrator’s instructions. Enjoy!

    MSG is an additive to food products used as flavoring and as a preservative. More information about jerky related terms can be found on the Jerky Glossary page at Jerky.com. It is useful as a reference guide when talking jerky talk. 🙂

    You can use any ‘barbecue seasoning’ that you want. It doesn’t require a specific brand name at all. In fact, you can substitute this for any of your favorite seasonings. My advice on these recipes is they should be used mostly as a guide. I recommend changing a few of the quantities and recommended seasonings to things that more suit your tastes. Feel free to experiment a little…and check the meat regularly to get the desired texture and moistness. After a few batches you’ll know exactly what to do and what not to do.
