What’s a “Jerky Shooter”?

A pretty popular device amongst homemade Jerky chef’s is the “Jerky Shooter”. You might find that a few of the recipes you find on the site call for the use of a Jerky Shooter, but the odds are you don’t know what one is, how to use it, or where to buy one. Well I am here to assist you.

Most any jerky recipe that are “chopped and formed” call for some sort of Jerky Shooter device.

What is it? – A Jerky Shooter is a mechanical device that consists of a handle, a trigger, and a nozzle head that is used to dispensed ground meat into even strips. Nozzle heads usually have interchangeable tips to help you get the right shape and consistency you’re going for. It is very similar in look and functionality to a caulking gun at your local hardware (just don’t use one of those).

How to use it? – It’s really quite simple, what you want to do is take whatever meat type you are working with and run it through some sort of food processor to get a ground meat consistency. Pack the ground meat into the nozzle end of the Jerky Shooter, making sure it’s pretty compact. Then aim the nozzle end towards to cooking surface you will be using, probably some kind of cookie sheet or wax paper. Then begin to squeeze the trigger gently to release the meat into uniform strips onto your surface. It’s as simple as that, now you are ready to begin dehydrating it. Now all you have to do is follow the instructions to whatever dehydration method you have chosen.

First, it provides a level of flavor and heat intensity that other meats simply can’t provide. Second, since beef jerky is already cooked, all it takes is a little simmering to release all the wonderful flavors and tenderize at the same time. Last, but certainly not least, it makes any ordinary nacho dish a meat lovers delicacy.

You are heavily encouraged to try this dish with some tenders pieces of your favorite beef jerky, recommended is something nice and smoky flavored. If you’re working with the larger slabs of beef jerky, cut it into smaller and more manageable pieces before you begin.

Another helpful tip is to off-set the sometimes high in sodium beef jerky with low sodium tomatoes or other ingredients.

Beef Jerky thief is caught

31-year-old David Gill of Middeltown, OH was nabbed by police shortly after trying to steal several bags of beef jerky and a entire box of candy bars from local gas station. The second one within the past few months alone. (see other beef jerky thief)

He allegedly got into an altercation with a store employee who accused him of concealing the stolen beef jerky and candy bars according to him trying to Butler County Sheriff’s Sgt. Chuck Laymon.

After knocking the store employee and fleeing the scene in a maroon Ford Explorer, Gill abandoned the vehicle, but was soon after captured inside an abandoned structure.

Whether the beef jerky was worth it or not, Gill was charged with attempted robbery, a first-degree felony, as well as obstructing official business and resisting arrest, according to Butler County Jail records.

Evidence indicates that although Gill does have a previous record of numerous offenses and misdemeanors this is his first beef jerky heist.

Beef Jerky vs. Biltong

For those of you wondering what the difference is between Beef Jerky and Biltong, I am here to break it down for you.

Hopefully we all know by now that Jerky is meat that is cut into thin strips (usually 1/4 of an inch thick) and dehydrated to remove the moisture content. But what you probably didn’t know is how Biltong is prepared…since none of you have probably tried it yet.

Biltong is similar in that it is a type of sliced, cured, and dehydrated meat, but it is the simple differences between it and Jerky that make the world of difference. First thing that you notice with Biltong is that it is cut against the grain of meat, something that differs with most Jerky products. Then you see that Biltong is spiced and flavored somewhat differently because of the use of pungent ingredients like vinegar, which is used as a pre-marinade. Finally you will notice that Biltong has a different cut to it, meaning that each strip is generally twice as thick as it’s beef jerky counter-part. Something that is just an acquired meat snack taste. That is typically why you don’t see Biltong sold in the U.S, it’s primarily a dish well-known in South Africa and some parts of Europe.

When choosing to experiment with making a Biltong dish of your own, please remember to dehydrate the meat in a cooler/well ventilated area (usually done outdoors which takes about 4 days) to get the full effect of it’s taste. Otherwise do it in your oven at a temperature between 100 to 160 degrees with the oven door cracked open for air-flow (usually takes 4 to 8 hours).
